
Winter Vegetable Assortment
Description
A simple preservation recipe with no extra fuss. We’ll make a mixed vegetable preserve for winter at home. The ingredient amounts are for sealing two one-liter jars of vegetables. The preserves keep well until winter in the refrigerator or another cool place. Happy cooking!

Step 1

At the bottom of two clean jars (1 liter each), arrange hot pepper and onion, sliced into rings. Also add peppercorns, chopped cilantro, bay leaves, and garlic cloves.

Trim the ends off the washed cucumbers. Pack the cucumbers into jars.

Wash the tomatoes, pierce them with toothpicks, and arrange in jars.

Pour boiling water over the vegetables for 20 minutes. After 20 minutes, drain the boiling water and pour again.

Drain the liquid into a saucepan, add a little more water, sugar, and salt. Bring to a boil and cook for 3 minutes.

Add 1 tsp of vinegar to each jar, then fill to the top with marinade. Seal with lids and turn the jars upside down until they have cooled completely. Then store in a cool pantry.
