Canape Assortment
Description
The appetizer is prepared quickly and simply. Several canapé options for every taste: herring tartare on bread slices; potato slices with herring on a beet base; stuffed eggs; a fish appetizer with cream cheese on cucumber slices; and bread slices with goat cheese and salmon! In my opinion, such appetizers can feed a large number of guests! If you prefer a lighter New Year's celebration without heavy mayonnaise salads, these appetizer options will definitely come in handy. And you can decorate these canapés to your taste: sprinkle with paprika, garnish with herb sprigs or lemon wedges. Improvise. Serve with herbs and sauce.
Instructions
- 1
Step 1

We will prepare the first and second canapé options together, since they are made with the same sauce. We need three large cucumber rounds and three thin slices. Cut the cucumbers like this.
- 2
Step 2

For the sauce, mix the cream cheese with wasabi and lemon juice.
- 3
Step 3

Brush the cucumber slices with sauce.
- 4
Step 4

Wrap the fish slices in slices.
- 5
Step 5

Place the wrapped slice on a cucumber round and secure with a toothpick. The first canape option is ready.
- 6
Step 6

Option 2. Cut the eggs in half and remove the yolks.
- 7
Step 7

Place a slice of cucumber on each egg, and on top of it — a little sauce from the first canapé variation.
- 8
Step 8

Place a slice of fish on top in the shape of a rose and secure it with a toothpick. The second canapé option is ready.
- 9
Step 9

Third option. Cut the bread into small pieces. You can fry or bake the bread pieces.
- 10
Step 10

Spread with cream cheese.
- 11
Step 11

Dice the herring, shallot, and tomato.
- 12
Step 12

Add the chopped capers and mix.
- 13
Step 13

Place on the bread. The third canapé option is ready.
- 14
Step 14

Fourth option. Cut circles from the bread.
- 15
Step 15

Mix the cream cheese, goat cheese, lemon juice, and herbs. Mix again.
- 16
Step 16

Spread in a thick layer on bread rounds.
- 17
Step 17

Place the diced salmon on top. The fourth option is ready.
- 18
Step 18

Fifth option. Peel the potatoes and slice them into thick rounds.
- 19
Step 19

Dissolve the sugar in the vinegar. Slice the onion into half-rings and marinate for about 20 minutes.
- 20
Step 20

Puree the beets in a blender. Add the cream and blend again. Season with salt.
- 21
Step 21

Place the beet mousse on the potato.
