Step 1

Wash the vegetables, peel them, and cut into fine strips. Chop the herbs finely as well. The vegetable mix for the dressing is ready.

Cook the noodles in salted water until tender.

While the noodles are cooking, prepare the omelet. Mix the eggs with milk and salt and whisk well.

Pour the mixture into a skillet and cook a thin omelet. Let cool and cut into thin strips.

Ideally, the dish should use wide rice starch noodles; I didn't have any on hand, so I used thin ones. The substitute isn't perfect, of course, but it worked for the dish. Pour boiling water over them and let sit for 15 minutes.

Once the main ingredients are prepared, let's prepare the dressing. Sauté all the vegetables in hot oil for just a couple of minutes. Add the vinegar, soy sauce, and spices, and simmer for a couple of minutes.

Let's start assembling our dish. In a deep bowl, place a little wheat and rice noodles, along with a small amount of omelet.
