Artichokes
Description
The English understand that the peculiarities of their country's climate require an exceptionally healthy lifestyle and proper nutrition to compensate for dampness and lack of sunlight. They have a weakness for vegetable dishes rich in vitamins and minerals. Artichokes frequently appear on their tables. Let's follow their excellent example and master the classic artichoke recipe.

Step 1

1. Prepare the artichokes for cooking – wash them, trim off the tough outer leaves and stems. Place thin slices of butter and garlic pieces into the leaf pockets of the artichoke, like little pockets.

Step 2

2. Place a pot on the stove and pour a little water into it—just enough to cover the bottom. When the water boils, insert a steaming rack into the pot and place the artichokes on it, positioning them with their former stems facing down.

3. Cover the pot with a lid and boil for about 20 minutes, until the artichokes become tender. Serve slightly cooled.
