Description
The recipe for preparing the Armenian drink "Matzoni" is very simple if you have a multicooker and don't mind experimenting in the kitchen. It's very important not to miss the optimal fermentation time—I've only indicated approximate hours, but in fact, you can adjust the fermentation time under a blanket and the subsequent cooling according to your taste. Try it every half hour, and once the consistency reaches your desired thickness and sourness, place it in the refrigerator. The drink is then ready to serve.

1. In a separate container suitable for the multicooker, mix the milk and starter culture. Place this container into the multicooker bowl, then fill the multicooker bowl with plain water up to the first measurement mark from the bottom. Let it cook in the "Yogurt" mode until the signal sounds.

2. Carefully pour the liquid into a jar, place the jar in a dark spot for 3-4 hours, wrapped in a blanket. Once cooled, transfer it to the refrigerator.
