
Armenian baklava
Description
Homemade baked goods for tea. I want to share— the baking is ready. Serve at the table.

1. Sift flour, baking powder, salt, and vanilla sugar into a deep bowl. Cut the cold butter into small cubes or grate it on a grater.

2. Rub everything with a knife and your hands until a uniform crumb forms.

3. Add sour cream and matsoni. Add two egg yolks.

4. Knead the dough thoroughly. Divide it into 3 equal parts (if baking on a large baking sheet), cover the bowl with dough and refrigerate for half an hour.

5. Meanwhile, you can prepare the filling. Toast the nuts in a skillet for a couple of minutes. Set aside a handful of whole nuts for garnish. Chop the remaining nuts with a knife.

6. Place the previously separated egg whites into a deep bowl. Add sugar and nuts. Mix everything carefully. That's it, the filling is ready!

7. Now you can start assembling the baklava. Roll out one piece of dough thinly and place it on a baking sheet, previously greased with oil or lined with parchment paper.

8. Place about half of the nut filling onto the dough.

9. Then place the second layer of dough and the remaining filling. Roll out the third piece and place it on top. Beat the egg yolks with a fork and brush the surface with a pastry brush so that the baklava turns golden brown.

10. Using a sharp knife, make cuts on the surface to create evenly sized diamond-shaped portions. Place the reserved nuts in the center of each diamond. Now, put the baking sheet into a preheated oven at 180 degrees.

11. After about half an hour, prepare a sweet syrup by mixing honey with water. Take out the baking tray, generously brush the baklava with honey, and return it to the oven for another 10-15 minutes.
