
Armenian khashlama
Description
Khashlama is a hearty and nutritious dish based on meat with added vegetables. It can be prepared outdoors over an open fire, or made at home. If you're looking for a simple yet delicious recipe with plenty of meat, I highly recommend trying this one.

1. I thoroughly wash the meat and cut it into pieces, like for shashlik, about 5x5 centimeters in size.

2. Transfer the meat to a bowl. Wash the lemon and cut it in half, then squeeze the juice into the bowl with the meat.

3. Add all the spices to taste, mix and massage the meat, then let it sit for 30-60 minutes in a cool place.

4. I cook over an open flame. I place the cauldron over the fire, pour in sunflower oil, heat it up, then add the pork and fry it slightly.

5. After a couple of minutes, I pour beer into the cauldron and cook for about 10 minutes after it comes to a boil.

6. Peel and wash the carrot, cut it into small pieces, and add it to the cauldron with the meat; heat for a couple of minutes.

7. Then I peel and wash all the onions, slice the bulbs into half-rings, and place them into the pot without mixing with the other ingredients.

8. Peel and wash the potatoes, cut them into small pieces, and add them to the other vegetables.

9. Wash all the tomatoes, slice them, and place them in a cauldron, heat for a couple of minutes, but do not stir.

10. I peel the eggplants and cut them into pieces; I also wash, clean, and chop the pepper. I add the vegetables one by one into the cauldron.

11. Cover the cauldron with a lid and cook over low heat for about 2 hours, until the liquid has completely evaporated. Then season with salt to taste and stir. Remove from heat and let it steep, covered, for about 10 minutes. Serve the dish hot, garnished with fresh herbs and fresh vegetables.
