Description

Perfect with tea and coffee. Armenian gata is a traditional Eastern pastry with flaky dough and a sweet, fragrant filling. In this version, the classic filling is enhanced with dates and walnuts, making the flavor even richer and more interesting. The soft sour cream dough with a subtle vanilla aroma literally melts in your mouth, while the sweet "khoriz" filling combines the caramel notes of dates, a nutty flavor, and a delicate hint of vanilla.

Instructions

  1. 1

    Step 1

    Step 1

Prepare the ingredients according to the recipe list.

  2. 2

    Step 2

    Step 2

Into a bowl, add flour (125 grams), salt, vanilla sugar, and 1 tablespoon of sugar.

  3. 3

    Step 3

    Step 3

Grate the chilled butter or margarine on a grater. To make the process easier, occasionally dip the piece of butter into the flour, then mix the ingredients.

  4. 4

    Step 4

    Step 4

Make a well, add sour cream, half an egg, and baking powder to the flour mixture, mix with a spatula.

  5. 5

    Step 5

    Step 5

Quickly gather the dough into a ball; it will be uneven, and that's how it should be, as this will ensure the dough's flakiness. Place the dough in the refrigerator for a while.

  6. 6

    Step 6

    Step 6

While the dough is chilling in the refrigerator, prepare the "horiz"—the filling for gata. To do this, toast 125 grams of flour in a dry skillet until it turns a light cream color, which will give the flour a subtle nutty flavor.

  7. 7

    Step 7

    Step 7

Sift the roasted flour through a sieve.

  8. 8

    Step 8

    Step 8

Add 100 grams of sugar, vanilla, and vegetable oil to the flour.

  9. 9

    Step 9

    Step 9

Rub all the ingredients together with your fingers until a uniform mixture is formed.

  10. 10

    Step 10

    Step 10

Add the chopped nuts to the flour mixture. Do not chop the nuts too finely so that the nut pieces remain noticeable in the filling.

  11. 11

    Step 11

    Step 11

Add chopped dates to the filling.

  12. 12

    Step 12

    Step 12

Sprinkle the work surface of the table with enough flour, as the dough is sticky.

  13. 13

    Step 13

    Step 13

Roll out the dough into a flat layer, making the center thicker and rolling the edges thinner. Place the filling in the center of the dough. Pull the edges of the dough toward the center and pinch them together. Use a brush to remove any excess flour from the gata, if any remains.

  14. 14

    Step 14

    Step 14

Place the gâteau on a baking sheet with the seam side down. Brush the top of the gâteau with a mixture of 1 egg yolk and 1 tablespoon of milk.

  15. 15

    Step 15

    Step 15

Using the back of a fork, create a pattern on the surface of the dough, being careful not to press too hard so as not to damage the surface.

  16. 16

    Step 16

    Step 16

Using a wooden skewer or fork, make punctures on the surface. Preheat the oven to 180°C (top-bottom mode) and bake for 30-35 minutes until done.

  17. 17

    Step 17

    Step 17

Place the ready gata on a rack and cool.
