
Armenian gata
Description
Delicious baked treat for the whole family. Armenian sweet gata is a pie. Serve the pastry with a cup of aromatic coffee or tea. After baking, let the pie cool for 15–30 minutes, then slice and serve. If not eaten all at once, wrap leftovers in plastic wrap or store in the refrigerator. Serve cooled or slightly warm.

For the dough, use full-fat milk and cream (preferably homemade). In a bowl, combine milk, cream, 1 egg and 1 egg white, clarified butter, and honey.

Add the yeast and gradually incorporate the flour, kneading until you have a soft and elastic dough.

Grease a bowl with vegetable oil, transfer the dough into the bowl, cover it with plastic wrap, and let it rise in a warm place for 1.5–2 hours.

For the filling, mix sugar, flour, salt, vanilla extract, and soft butter, and stir well.

The proper filling should hold together as a single lump when you take it in your hands.

Take out the dough and divide it into 3-4 parts, shaping each into a ball.

Press in the center of the ball and use your hands to shape it into a flat disc. Place 3-4 spoons of filling in the center, then gather all the edges together and seal them tightly (like a dumpling).

Flatten the pouch into a pancake again, and repeat the same steps with the remaining dough.

Place all the flatbreads on a parchment-lined baking sheet, decorate with thin strips of dough, and prick several times with a fork.

Mix the remaining chicken yolk with a spoonful of water and brush the pastry with the mixture. Bake in a preheated oven at 180–200 degrees for 30 minutes.
