Armenian adjika for winter

Description

Homemade preserves keep for a long time. A friend once recommended this simple recipe for Armenian adjika for the winter. I had already made adjika many times before—or so I thought—the right way. But somehow I never thought to add herbs. And as it turned out, completely in vain—they really complement and bring out the tomato flavor and heat! So I’m sharing with you too a simple way to make Armenian adjika for the winter.

    1. Puree the tomatoes very thoroughly using a meat grinder or blender. Place over heat.

    2. Clean the peppers by removing the parts with seeds, chop them finely, and add to the tomato puree that is already simmering. Stir and cook for another 10 minutes. Add the oil, stir, and keep on low heat for another hour.

    3. While the adjika is on the stove, make the dressing. Chop and blend the salt, sugar, herbs, khmeli-suneli, and garlic in a blender.

    3. An hour has passed — turn off the stove, stir our green dressing and vinegar into the adjika, and mix well. Wait until completely cooled.

    4. Transfer into sterile jars and seal with lids. Store in the refrigerator.
