Description

It works for both holidays and everyday meals. Arkas is a cheese from Belarusian cuisine, very delicate and sweet, made from the rich milk of home-raised cows or goats. It is served as a standalone dish or as an accompaniment to pancakes, syrniki with berries, or simply with sour cream. The cheese keeps for 3–4 days in a closed glass or ceramic container. It can be served warm or chilled.

    Prepare all the necessary ingredients for making arkasa.

    Pour kefir and sour cream into a heavy-bottomed saucepan and crack in the eggs. Add the sugar and salt.

    Wash the raisins thoroughly and pat dry. Place the raisins in a saucepan and mix everything well.

    Pour the milk into a saucepan and stir.

    Place the saucepan over low heat and cook, stirring, until the mixture curdles and the whey separates.

    Line the sieve with cheesecloth folded in four layers.

    Pour the mixture into a sieve and hang it so the whey drains for 3–4 hours. After that time, transfer the finished cheese to a plate and serve.
