Arganak
Description
The dish is prepared without unnecessary complications. I suggest making arganak with chicken and beef. This more modern and home-style version will surely adorn any table and diversify your diet. The soup is quite similar to the familiar meatball soup, but this version has a richer and more vibrant flavor, not to mention the wonderful aroma! I highly recommend giving it a try. The dish is ready to serve.
Instructions
- 1
Step 1

Prepare everything you need and let's get started.
- 2
Step 2

First, you need to cook chicken broth. Any part of the chicken will work; I'm using a chicken thigh. Add water, one onion cut into pieces, and carrot to the meat. Add salt to taste and cook the chicken with vegetables for about 30 minutes.
- 3
Step 3

Meanwhile, add to the minced meat the onion fried in butter, rice boiled until half-cooked, chopped herbs, salt and pepper to taste.
- 4
Step 4

Thoroughly mix everything until smooth.
- 5
Step 5

Form small balls from the minced meat.
- 6
Step 6

By that time, the ready broth should be strained; set the chicken aside for now, and bring the broth back to a boil.
- 7
Step 7

Drop the prepared meatballs into the boiling broth and cook for about 10 minutes after it comes to a boil.
- 8
Step 8

Separate the yolks from the whites, add lemon juice, and beat everything with a fork.
- 9
Step 9

Pour the yolks into the soup and, without bringing it to a boil, heat for a couple of minutes.
- 10
Step 10

The delicious and aromatic soup is ready. By this time, the chicken should have cooled down; shred it, pour the hot soup into bowls, and place a piece of chicken meat into each.
