
Watermelon with Cheese
Description
A tasty appetizer for any gathering. For this appetizer, choose a sweet, firm watermelon, preferably with as few seeds as possible. You can use cottage cheese or cream cheese, but be sure to salt it to taste. If you don't have a pastry bag, fill the watermelon barrels with a regular spoon. And don't worry—the cheese holds up very well inside and won't fall out.

Prepare all the necessary ingredients for making watermelon with cheese.

Cut a piece of watermelon lengthwise across its entire surface to a height of about 4 centimeters. For an appetizer, it's better to use the middle of the piece, as there are fewer seeds there. Using a round shape—I used an ordinary shot glass—cut out little barrel shapes. Carefully remove all the seeds.

Using a smaller cutter, remove the center. I used a fondant cutter, but a smaller shot glass will work too. Arrange them on a serving platter right away.

Place the cheese in a bowl and pour in the olive oil.

Finely chop the mint leaves and place them in a bowl with the cottage cheese and butter. Mix everything thoroughly.

Using a pastry bag fitted with a star tip, tightly fill the holes in the watermelon barrels.

Cut the thin cucumber slices into 3–4 pieces, garnish the appetizer, and serve immediately.
