
Arancini with Mozzarella
Description
Arancini are breaded, deep-fried rice balls. The filling can be anything: in the classic version, a Bolognese sauce–based filling is used; spinach, butter, mozzarella (as in mine), and ham fillings are also very popular. Serve the appetizer with your favorite sauce, for example, tomato or garlic. Serve the appetizer at the table.

Step 1

1. Heat butter and vegetable oil in a skillet. Sauté the chopped onion and a clove of garlic for 5–10 minutes until soft. Mix the onion mixture with the risotto. Reduce the heat to medium and pour in the wine. Simmer the rice for 15 minutes, then add grated "Parmesan." Cool the mixture in a flat, wide container.

2. Divide the cooled rice into medium balls and, with damp hands, fill each portion with a small piece of "Mozzarella" cheese.

3. Roll the balls in flour, dip in beaten egg, then coat with breadcrumbs.

4. In a saucepan, fry the arancini in hot oil for 4 to X minutes, until golden brown.
