
Arancini from Couscous with Zucchini and Mozzarella
Description
This recipe won't take much time. It will come in handy for those whose household members refuse to eat porridge and zucchini. Believe me—they'll devour these golden, fragrant balls in an instant. Preparing the dish takes a little effort, but the result is worth it. To make the arancini more aromatic, add lemon zest or dried aromatic herbs to the mixture. Be sure to cook them. Serve warm or chilled.

1. Pour the couscous into a deep bowl, add a pinch of salt, and pour in two cups of boiling water (or follow the instructions on your package). Cover and let stand for 10–15 minutes.

2. Peel the onion and finely chop it. Sauté with a spoonful of vegetable oil until lightly golden.

3. Add zucchini to the onion, grated on a coarse grater. Season with salt and pepper to taste, and sauté for 3–4 minutes. Then let cool.

4. Cut half of a large mozzarella ball into pieces.

5. Mix the cooled couscous and zucchini, hard cheese grated on a fine grater, and the egg. The mixture should not be runny! If yours is too soft, you can add a little flour.

6. Put the flour and breadcrumbs into separate bowls, and beat 3 eggs in the third one.

7. From the couscous mixture, form a flat patty (slightly less than a tablespoon), place the mozzarella in the center. Shape into a ball.

9. Then dip into the egg mixture.

10. Coat in breadcrumbs. Then dip in egg and breadcrumbs again — you get a double coating.

11. It's best to prepare all the balls at once (I ended up with 15 large ones; you can make 20 smaller ones).

12. Heat vegetable oil over medium-high heat and add 3–4 arancini balls at a time (or fry in a deep fryer).
