
Peanut pancakes

The baking is simple and quick. Pancake lovers will definitely appreciate my recipe. These pancakes aren't much more difficult to make than regular ones: the only addition to the classic thin pancake batter is crushed fried peanuts. It seems so simple, yet the flavor of the finished pancakes changes dramatically! The taste becomes rich and pronounced—I really love it! Give it a try and share your impressions in the comments.

Prepare all the necessary ingredients. Pre-roast the peanuts in a dry skillet, in the oven, or in the microwave using the "grill" setting, then peel.

Mix the eggs with sugar and whisk until the sugar dissolves slightly.

Add part of the milk and stir.

Now add all the flour, mix well to avoid lumps; you should get a fairly thick mixture.

Now gradually pour in the remaining milk, stirring constantly. This way, you'll get a perfectly smooth batter for pancakes without a single lump, even without using a mixer. Finally, add 30 ml of vegetable oil and stir again; this will allow you to cook the pancakes without greasing the pan with oil.

Grind the peanuts into fine crumbs using a blender.

Add the chopped peanuts to the pancake batter and mix well.

Heat the pan thoroughly. Pour a small amount of batter and spread it evenly over the entire surface of the pan. Cook for about a minute on each side until golden brown.
