
Peanuts in salted caramel
Description
The recipe won't take much time. If you're not worried about extra calories, make the caramel with milk—it will make the caramel and peanuts much tastier. Optionally, you can add your favorite spices—cinnamon, cardamon, vanilla, ginger, etc.—they will blend well with the overall flavor. Serve chilled.

Prepare all the ingredients. Use raw peanuts without shells.

Into a large-diameter frying pan, pour the sugar, add half of the water, and place over high heat.

Wait until the sugar dissolves completely and turns into syrup.

Transfer the peanuts to the syrup, reduce the heat under the pan to moderate or even low. Now the peanuts need to be stirred constantly.

At some point, large bubbles will appear on the surface; make sure the syrup doesn't start to burn. Adjust the heat and constantly stir the contents of the pan.

My sugar crystallized too quickly, so at this stage I added coarse sea salt to taste and poured in the remaining water.

Now keep the peanuts in the caramel for another few minutes; the total cooking time will definitely take about 20 minutes. As soon as sugar crystallization starts again, you can turn off the heat. At this stage, you can add a bit of powdered cinnamon or any of your favorite spices for flavor and aroma.

Line any baking sheet with parchment paper, place the peanuts on it, and let them cool completely along with the caramel.

Once the peanuts have cooled completely, break apart the clumped caramel pieces by hand.

Serve immediately after preparation or transfer to an airtight container and store in it to prevent the treat from becoming moist.
