Arabian pancakes
Description
Delicious baked treats for the whole family. These little pancakes are perfect not only for a family tea time, but also for any festive table. This delicate and very tasty treat will delight both children and adults. Usually, they are made with sweet fillings—such as apple, nut, or cream—but you can also try savory versions with cheese, mushrooms, or chicken breast. They can be shaped in various ways: triangular like samsa, or rolled into waffle-cone shapes. I'll show you the latter version with a creamy filling, but feel free to experiment. The recipe is simple—definitely give it a try. Serve warm or chilled. Perfect with tea.
Instructions
- 1
Step 1

Prepare all the ingredients for the dough. We will need: milk, sugar, salt, yeast, and flour.
- 2
Step 2

Warm the milk until it is lukewarm, then add sugar, salt, and yeast. Mix well.
- 3
Step 3

Add flour.
- 4
Step 4

Mix everything with a blender or mixer until smooth. The batter should be slightly thicker than that for regular pancakes. Cover the container with a towel and let it sit in a warm place for 30 minutes.
- 5
Step 5

Meanwhile, let's prepare the filling. I suggest making a cream, but you can fill the Arabic pancakes with any filling you like. For the cream, we will need: milk, sugar, flour, egg yolks, vanilla, and zest of any citrus fruit to your taste.
- 6
Step 6

Rub the yolks with sugar, vanilla, and flour. If the mixture is too dry, you can add 1-2 tablespoons of milk from the total amount.
- 7
Step 7

Pour the milk into a saucepan or skillet, add the zest, and bring to a boil.
- 8
Step 8

Then add the yolks rubbed with sugar and flour, and, stirring constantly, cook the cream over low heat until it thickens.
- 9
Step 9

By that time, the dough is already ready, and you can see small bubbles on its surface. Do not mix!
- 10
Step 10

Heat a skillet. If the skillet has a good non-stick coating, you can skip greasing it with oil. Pour 2-2.5 tablespoons of batter and spread it evenly with a spoon into a circular shape. Cook the pancake on one side only. The bottom should turn golden brown, and numerous small holes should appear on the surface.
- 11
Step 11

While still warm, fold the pancakes in half, overlapping them almost halfway, simply pressing the dough together with your hands. Finally, fill the prepared cones with the filling.
- 12
Step 12

The Arabic pancakes are ready. I sprinkled the top with crushed walnuts.
