
Orange marshmallow

Prepare the ingredients.

Remove the core from the apple, cut into slices, place in a covered dish and put in the microwave oven for 5 minutes to bake.

While the apple is baking, pour room-temperature water over the agar-agar and let it steep for about 15 minutes.

Remove the zest from 1 orange.

Separate the flesh of the baked apple.

Blend the apple pulp.

Press the apple puree through a sieve and take 50 grams of the puree for making marshmallows.

Cut the orange in half, and squeeze juice from one half.

Place the orange and apple pulp into a saucepan, add half of the sugar intended for the syrup.

Boil the mixture for 3-4 minutes after it comes to a boil.

Beat the egg white into a fluffy foam. Then gradually add the sugar in parts, continuing to beat.

Beat the egg white with sugar until stiff peaks form, add the orange zest and beat again.

Add the remaining sugar, soaked agar-agar, and orange juice to the saucepan with the reduced fruit purée. Heat and cook for 6 minutes from the moment it begins to boil, stirring constantly.

Slightly cool the syrup before pouring it into the egg whites.

Gradually pour the syrup into the egg whites while continuously whisking. Beat until the mixer leaves clear, distinct traces on the meringue mixture.

Transfer the meringue mixture into a pastry bag. Pipe the meringue onto a previously prepared surface lined with parchment paper. You will need 2 sheets, each the size of a standard baking tray. Place the meringue in a dry, well-ventilated area to dry.

After 5-6 hours of drying, the marshmallows should easily detach from the sheet. Pair them up and roll in powdered sugar.
