
Orange poppy seed cake

It's best to prepare this delicious dessert during the cold season, as oranges have just the right sweetness and juiciness in winter. Plus, the citrus aroma always delights and lifts your mood in cold and frosty weather.

1. Wash and slice the oranges into thin slices. Dissolve 150 grams of sugar in 350 ml of water. Place the orange slices into a saucepan with the water and sugar, and set it on the stove. Cook until the orange peel becomes soft.

2. Prepare a 20 cm baking pan. Line the bottom with parchment paper and grease the sides with butter. Remove the orange slices from the syrup and dry them with a paper towel. Arrange some of the oranges decoratively on the bottom of the pan.

3. Coarsely chop the almonds. In a bowl, mix together the flour, poppy seeds, almonds, and baking powder. Whisk thoroughly to evenly distribute the ingredients.

4. Blend the remaining orange segments with 75 ml of the syrup in which they were cooked.

5. Beat 3 eggs and sugar until a stable foam forms. Then gently add the ground oranges and carefully mix. Combine the mixed flour, almond, and poppy seed mixture with the orange-egg mass. Pour the prepared batter into a mold and bake in a preheated oven at 170 degrees for 45 minutes.

6. To prepare the cream, mix eggs, sugar, soft butter, juice of one orange, and zest. Place the mixture over a water bath and cook, stirring constantly, until the mixture begins to thicken.

7. Cool the baked sponge cake and remove it from the pan. Cut it into three layers, soak with syrup, and spread with cream. Assemble the cake so that the bottom layer with oranges ends up on top.
