
Orange Ricotta Pancakes
Description
These tender orange pancakes can be quickly prepared for breakfast. They are good served with powdered sugar or maple syrup, but butter is the best topping. Serve warm or chilled. Perfect with tea.

1. In a bowl, mix ricotta cheese, sugar, eggs, and orange zest.

2. Add flour and mix until a smooth consistency is achieved.

3. If the dough is too thick, add extra milk to thin it slightly.

4. Heat 3 tablespoons of canola oil in a large skillet over medium heat. Pour the batter onto the skillet, using about 1/4 cup of batter for each pancake. Cook the pancakes in several batches until golden brown, about 4-5 minutes per side.

5. Place the pancakes on a large plate lined with paper towels and let the oil drain off.

6. Serve the pancakes immediately while hot, sprinkled with powdered sugar or drizzled with maple syrup. Butter is also welcome! You can also garnish the pancake dish with orange slices.
