
Cranberry Orange Muffins

Delicious baked treats for the whole family. Aromatic muffins with a subtle orange note will make your morning sunny. This recipe yields 12 muffins.

1. Preheat the oven to 175 degrees. Grease a 12-cup muffin tin and set aside. Mix flour, baking powder, and salt in a bowl. In a large bowl, beat eggs with a mixer for about 20 seconds. Add sugar and continue beating until the mixture thickens. Mix in finely grated orange zest. Slowly beat in melted butter. Add half of the sour cream, mix, then add the remaining sour cream. Add the flour mixture and stir with a spatula. Add the cranberries and gently fold in until evenly distributed (do not overmix).

2. Evenly divide the batter among the muffin cups (about 2 1/2 tablespoons of batter per cup). Bake for 20–23 minutes, until lightly golden. Let cool on a wire rack for 5 minutes before frosting the muffins.

3. To make the glaze, mix 1/2 cup of sugar and orange zest in a bowl, and set aside. In a small saucepan, combine the remaining sugar (1/4 cup) and orange juice, bring to a boil over medium heat. Stir occasionally until the sugar completely dissolves and the mixture thickens.

4. Generously glaze the muffins with the prepared icing.

5. Sprinkle with a mixture of sugar and orange zest. Serve the muffins warm.
