
Orange pastry
Description
Delicious pastry for the whole family. I want to share a recipe for very tasty orange sponge cakes. I usually decorate the cakes with almond flakes and powdered sugar. But the Year of the Tiger is just around the corner! I suggest decorating them with chocolate stripes—the pastry is bright, orange, just like a tiger. The pastry is ready. Serve it to the table.

Prepare the ingredients for the sponge cake, glaze, and chocolate stripes. Let’s begin!

Wash the oranges thoroughly. Remove the zest from one orange; that will be enough for the batter. Squeeze the juice from two oranges, though—you need 150 ml of juice for the batter and 1–2 tbsp of juice for the glaze.

The butter should be at room temperature and soft. Add sugar to it and beat with a mixer until smooth.

Add orange zest and one egg to the dough. Beat with a mixer until smooth, then beat in the second egg and whisk again.

Add flour and baking powder to the dough, and pour in 150 ml of orange juice.

Beat the dough until it becomes smooth and uniform.

Line a baking dish with parchment paper and pour in the batter; it is not very thick. Smooth it out and place it in a preheated oven. Bake at 180°C for 35 minutes.

Check the sponge cake’s doneness with a bamboo skewer; if it comes out dry, the sponge cake is ready.

While the sponge cake is cooling, combine the powdered sugar with 1-2 tablespoons of orange juice. If the dessert is for adults, part of the juice can be replaced with orange liqueur. Mix the glaze well.

Brush the warm sponge cake with glaze. Transfer to a rack to cool.

Cut the sponge cake into 8 pieces. Melt the chocolate, transfer it to a piping cone, and make stripes on the pastries. I made several variations: straight stripes, rounded ones, broken lines, and waves. Choose the option you like or come up with your own.
