Description

The proportions of lemon and orange juice can be adjusted to your preference. You can also make the curd using just one type of citrus. This citrus cream can be served as a dessert on its own.

    To prepare curd, gather the necessary ingredients. Wash the lemon and orange thoroughly in warm water, then pour boiling water over them.

    Squeeze the juice from the lemon and orange. From large fruits, you'll get exactly 150-180 ml. If it's slightly less, you can add some water.

    Remove the zest. Try not to touch the white part. It's bitter.

    Mix the zest with the squeezed juice. Add starch and sugar. Place on the fire.

    In a separate bowl, whisk the egg yolks. Bring the juice to a boil; it will thicken. Gradually pour it into the yolks, stirring constantly.

    Return to the heat and, stirring constantly, bring to a boil again. The mixture should reach a medium consistency. Remove from heat.

    Immediately add the butter. It will start to melt. Mix it into the cream.
