Pound each piece of meat with a meat mallet, then season with pepper and salt.

Preheat a grill pan. On the heated pan, sear the meat on both sides until nicely browned. Sear each side for about 2-2.5 minutes. During this time, it's best not to disturb the meat.

Serve the steak at the table. It can be accompanied by a sauce. I prepared a sauce based on sour cream, garlic, and spices.
