Prepare the ingredients.

Season the ground meat with salt and pepper, add a pinch of lemon zest and a tablespoon of butter.

Add grated Parmesan and a little nutmeg.

Beat one egg and mix the mince well until smooth.

Put flour into a bowl, add two eggs.

Salt, add 1-2 tablespoons of olive oil.

Knead the dough, place it in a bag, and take small pieces of dough to work with, keeping the remaining dough in the bag.
