Take a saucepan, place it on the stove. Add a piece of butter and melt it. Then add the washed rice to the saucepan. Fry it over low heat for five minutes, stirring constantly. Then pour in the milk, add salt and the grated zest of half a lemon.

Place raw chicken yolks in a bowl, having previously separated them from the whites. Add granulated sugar to them. Using a mixer, beat the yolks with sugar until you get a white mass.

Carefully add the egg-sugar mixture to the saucepan with the remaining ingredients, stirring constantly. Immediately remove the saucepan from the heat.

Rinse the raisins and soak them in juice from half a lemon. Add them to the other ingredients and mix. If possible, it's better to soak the raisins in cold water overnight so they can plump up.

In a separate container, beat the egg whites until stiff, glossy peaks form. To make this easier, ensure the egg whites are chilled. You can also add a pinch of salt or a little lemon juice to them.
