Description
Delicious baked treat for the whole family. Instead of dried cherries, you can also use dried cranberries for the cake. To neatly remove the cake from the pan without damaging it, let it cool completely in the pan. Then, gently run a knife along the sides to separate the cake from the pan. If desired, decorate the cooled cake with powdered sugar or a glaze made from powdered sugar and lemon juice. Serve warm or chilled. Perfect with tea.

First, soak the dried fruits. Rinse them, brew 250 milliliters of black tea, and let it cool. Pour the tea over the dried fruits, then add rum and sugar. Leave the fruits to soak overnight.

Sift the flour, then add white pepper, lime zest, and a pinch of salt. Mix thoroughly. Then slice the apricots, removing them from the tea syrup.

Now break two eggs and lightly beat them with a whisk. In a bowl, combine the flour and dried fruits together with the syrup, then pour in the eggs. Mix this mixture with a spoon.
