
Angel cupcake
Description
Perfect with tea and coffee. If you have leftover egg whites from preparing another dish, I'll tell you. Serve warm or chilled. Ideal with tea.

1. Turn on the oven and let it preheat to 180 degrees. Beat the egg whites with a pinch of salt.

2. Beat until fluffy, but not to stiff peaks as for meringue, rather to soft peaks: the tips should curl.

3. Add citric acid and sugar (regular and vanilla), beat for another two minutes.

8. These cupcakes are usually served with berry jam or sauce, which is very easy to prepare even in winter. I made mine using frozen strawberries. Cut the berries into small pieces.
