
Pineapple Marshmallow

Prepare the ingredients.

Place the pineapple pieces into the bowl.

Purée the pineapple until smooth; if there are any chunks left, it's better to rub it through a sieve.

Mix the pectin with two tablespoons of sugar from the total amount.

Place the pineapple purée in a saucepan, add the sugar and pectin mixture, and set over medium heat.

Heat the pineapple purée with pectin until the first "bubbles" appear, remove from heat, cool down, or even place in the freezer for a few minutes.

Pour 75 ml of water into a saucepan, add the remaining sugar, sprinkle in the agar-agar, and set aside for now.

Whip the egg white into a fluffy foam, then add the chilled fruit puree with pectin, and whip until fluffy.

Heat the mixture of sugar, water, and agar-agar over medium heat, stirring constantly, until it reaches 108–110 degrees. If you don't have a special thermometer, boil for approximately 2 minutes after boiling begins; the mixture should start to foam.

Gradually pour the sugar syrup into the egg white mixture while continuing to whisk until you achieve a fluffy marshmallow-like consistency. The mixer whisk should leave distinct, well-defined trails.

Transfer the marshmallow mixture into a piping bag and pipe onto any surface lined with parchment paper. Leave the marshmallows to dry for 6-8 hours.
