
Pineapple vinegar

Prepare all the ingredients.

Pour water into a saucepan, add sugar. Bring to a boil to dissolve the sugar, then let cool to room temperature.

Thoroughly wash the pineapple. Cut off the skin in thick layers. Then slice it into pieces of a convenient size for you.

Remove the tough core from the pineapple and cut it into medium-sized cubes.

To make the vinegar, we will use only the pineapple peel and core. Place them into a clean sterilized jar.

Pour the sugar syrup into the jar up to the shoulders. You should leave a little space free to make it easy to mix the contents of the jar later.

As a result, all pieces of pineapple should be covered with syrup and not float to the surface. If necessary, you can place a weight on top.

Cover the jar opening with several layers of gauze or cotton cloth. Leave at room temperature for 2 weeks.

Every day, open the jar and stir the contents with a wooden spoon. The pineapple peel and core will settle, become softer, start to foam and ferment.

After 2 weeks, strain the resulting mixture.

Pour the vinegar into a clean sterilized jar. Let it sit for another 1–2 months until the desired acidity is reached. Then, transfer it into clean sterilized narrow-necked bottles and store in the refrigerator.
