
Pineapple with mint syrup

Ripe and fresh pineapples in our geographical latitudes are a rare occurrence, but whenever I manage to find a decent specimen, I always treat my family to pineapple with mint syrup. This is a dessert ready in a jiffy—prepared incredibly quickly, yet turning out to be of restaurant, gourmet quality. So here it is—pineapple with mint syrup. The ready dessert can now be served.

First, finely chop the mint. Set aside a couple of mint leaves for garnish.

Mix the crushed mint with sugar and rum, rub thoroughly and let stand for about 20 minutes.

Peel and cut the pineapple into small cubes or pieces.

We thoroughly squeeze and strain the mint syrup. Mix the clear strained syrup with the pineapples.
