
American sponge cake
Description
The recipe won’t take much time. Making an American sponge cake is very simple, and the result will surely delight you. It works excellently as a base for cakes or simply as a standalone dessert if you dust it with powdered sugar. You can bake it in the oven or in a multicooker; the sponge is forgiving and will definitely turn out well. Keep the recipe handy. Serve it warm or chilled. Perfect with tea.

Prepare all the ingredients.

Combine the milk and butter. Heat until the butter is completely melted. You can do this on the stove; I heat it in the microwave.

Sift the flour with the baking powder and salt twice.

Beat the eggs.

Continuing to beat the eggs, add the sugar gradually in portions. The mixture should turn pale and increase significantly in size (it takes me about 7‑10 minutes).

Add the flour and mix the dough using a spatula, moving from top to bottom.

Heat the milk with butter again, and as soon as it reaches a boil, pour it into the dough in 2–3 stages.

Pour the batter into a pan about 22 cm in diameter. I used a multicooker. Line the bottom with parchment paper (do not grease the paper or the sides with oil). Bake in the oven at 180 °C for about 35 minutes. I cooked it in the multicooker on the “Bake” setting for 1 hour.

Allow the baked sponge cake to cool slightly in the pan, then carefully transfer it to a rack to cool completely.
