
Amaranth burger buns
Description
Perfectly pairs with tea and coffee. You no longer need to buy burger buns—using this recipe, you can make incredibly tasty and healthy buns from amaranth. You can use either amaranth flour or ground amaranth seeds; the taste and texture of the dough will remain unchanged. Both wheat and rye starters work well—this will only slightly affect the aroma and flavor of the finished buns. These buns can be served with meat or butter alongside a cup of coffee. Serve cooled or slightly warm.

1. Prepare the starter: dilute the starter with room-temperature water and mix well. Add the sifted flour and mix. Cover the mixture with plastic wrap and let it sit for 8 hours at room temperature.

2. Place the starter into the bowl of a mixer, add room-temperature milk, egg, sugar, salt, and slightly warmed melted butter. Add sifted wheat and amaranth flour, and knead the dough at speed 2 for 5 minutes.

3. Shape the dough into a ball, place it in a bowl greased with vegetable oil, and cover with plastic wrap. Let it rest at room temperature for 3 hours. Turn the dough out onto a work surface, shape it into a ball, and flip it seam-side down. Divide the dough into 8 pieces.

4. Roll each piece of dough into a ball. Place the dough balls onto a parchment-lined baking sheet, leaving space between them. Cover the dough with plastic wrap and let rest for 1 hour.

5. Brush the buns with egg beaten with water. Sprinkle with sesame seeds and bake the buns in a preheated oven at 200 degrees for 15-18 minutes.
