
Acapulco Margarita
Description
The dish is prepared without unnecessary complications. Place the fish in a shallow baking dish. In a bowl, mix tequila, orange liqueur, lime juice, 1 teaspoon of salt, garlic, and olive oil. Pour the mixture over the fillets and rub it into the fish. Cover and refrigerate for 1/2 hour, turning the fillets once. Preheat the grill to high heat. In a small bowl, combine tomatoes, onion, jalapeño, cilantro, and sugar. Season with salt to taste. Set the salsa aside. Remove the fillets from the marinade and pat dry. Brush the fillets with oil and sprinkle with ground black pepper. In a small saucepan, boil the remaining marinade for a few minutes. Remove from heat and strain. Set aside to cool. Grill the fish for 4 minutes on each side. Transfer the fish to a serving plate. Spoon the salsa over the fish and drizzle with the marinade. The dish is now ready to serve.
