Description

Peanuts are quite popular in some parts of Africa. They are used to make soups, stews, or sauces. This dish can be served on its own or over white rice or boiled millet. The selection of vegetables can vary—turnips, potatoes, or pumpkin all work well. The base, of course, is tender chicken and a nutritious, aromatic peanut sauce. All ingredients are simple and easily accessible, despite the dish's seemingly exotic nature. The main idea is to deliciously and satisfyingly feed a large family. I highly recommend trying this African chicken—a slightly unusual, yet very tasty dish.

    1. Prepare all the necessary ingredients.

    2. To prepare the sauce, roast the peanuts in a dry skillet, then grind them with a mixer. To make the process easier, you can add a little vegetable oil or water to the nuts. Dilute the ground peanuts with the prepared broth, mix well, and set aside for now. Fry for several minutes. Add the chicken pieces. Stir well and cook for several minutes, stirring constantly.

    3. Rub the chicken pieces with salt and pepper, and sear them on a hot skillet over high heat on both sides until golden brown.

    4. Remove the chicken to a plate, and in the same skillet, add the diced onion and bell pepper. Set aside.

    7. Add the peanut butter and broth mixture, and if necessary, add more broth to the skillet. The sauce should almost cover the chicken. Season to taste with salt. Cover the skillet with a lid, bring to a simmer, then cook the chicken over the lowest heat for about 30 minutes.
