
Meat with Afarar
Description
The dish is prepared without unnecessary complications. I use a pork and beef mixture for the filling to make it moderately juicy. There's no need to spread it too thickly, otherwise the meat won't cook through. Add your favorite spices, herbs, and greens to taste. Instead of meat, you can also try filling the afaarar with a mixture of herbs and cheese, cottage cheese, or even grated pumpkin. Serve immediately while hot. The prepared dish is ready to be served.

Add salt to the sifted flour, mix, gradually add 1 cup of water, and knead a soft dough. Then let it rest on the table for 20–30 minutes.

Add finely chopped onion to the minced meat, season with pepper and salt, and add 1 egg. Mix until smooth.

Roll the dough into a sausage, then cut it into 2 cm thick pieces. Roll each piece into a very thin oval (if folded in half, it should fit on the frying pan).

Spread the filling in a thin layer over one half of the dough, leaving the edges free. Cover with the second half and crimp the edges of the dough with a fork.

Fry the pancakes on a dry, well-heated skillet on both sides until golden brown.

Place the fried afarar on a plate or cutting board and brush with melted butter.
