1. Bring the milk to a boil. Pour in the whey. Leave it to simmer on low heat. Wait until the cheese curdles. This usually takes about 7 minutes.

2. Take another small saucepan or bowl and cover it with a double layer of cheesecloth. Pour the cheese into it. First the whey will drain out, then the cheese itself. Salt lightly. Add herbs and spices (optional).

3. Tie the cheesecloth tightly, crossing two ends and then the other two ends. Once you have a “cross over cross” tie, hang it so the remaining whey can drain off.

4. After the whey has drained off, place the cheese under a press while still wrapped in cheesecloth. Set it on a plate, press another plate on top, and place a 1-liter jar filled with water on top. Put everything in the refrigerator.
