Apple Ajika

Description

Perfectly complements meat, poultry, and side dishes. This sunny, slightly sweet adjika is great for sandwiches or salads. You can cook it, and then it will keep until winter; or simply blend it raw and enjoy immediately. Feel free to experiment with apples—use only sweet ones or mix several varieties. I'm making a small batch, but you can increase the ingredient quantities if you'd like more. Store the finished sauce in the refrigerator for several days.

    Step 1

    Peel the apple, remove the core and seeds, then chop into small pieces and place in a blender.

    Wash and peel the carrots, peppers, and garlic, then add them to the apples and finely chop everything.

    If you don't plan to cook, add salt, vinegar, and leave for several hours, then store in the refrigerator.

    If you decide to cook, transfer the vegetables to a saucepan, add salt after boiling, and cook for 20–30 minutes. At the very end, add vinegar, pour into jars, cool to room temperature, and store in the pantry.
