Adjika with Plums and Tomatoes

Description

Adjika is made not only from tomatoes, but also from plums, peppers, and other kinds of vegetables and fruits. The finished adjika yields 2 liters. It can be served warm or chilled.

    Pit the plums. Remove the cores and stems from the peppers.

    Cut the tomatoes in half and grate them on the coarse side of a box grater, cut side down. This removes the skin and the spot where the stem was attached. You only need the tomato flesh.

    Grind the plums, onion, and both types of pepper through a meat grinder. Mix the mixture and cook for 30 minutes, stirring.

    When the adjika has reduced by 50%, add sugar, salt, and vinegar; press the garlic through a garlic press and add the spices to the adjika. Mix everything well. Let it simmer for 2 minutes, then turn off the heat. Pack into jars and seal them. Sterilize the jars first; you can also use simply clean jars, but in that case store the finished adjika in the refrigerator.
