This adjika pairs well with meat dishes for lunch or dinner all year round and is also a great match for barbecue at a picnic. Store in a cool, dark place.

1. Let's prepare the necessary ingredients. Of course, this version is far from the "fiery" original, but it will work perfectly as a substitute for store-bought sauces and ketchups.

2. The main step is preparing the vegetables. Wash the tomatoes and cut them into quarters. Peel the onion, garlic, and carrots. Cut them into small pieces. Wash the bell peppers and remove the seeds and stems.

3. Now run all the vegetables (except the garlic) through a meat grinder. You can also use a blender. Right away, prepare a large pot into which you will pour the future adjika. Put all the minced ingredients on the heat and bring to a boil.

4. Hot peppers can also be minced in a meat grinder or cut into thin strips. To reduce the heat, you can remove the seeds. Add salt, vinegar, vegetable oil, and sugar. You can also complement this simple sweet adjika recipe with apples. Leave to simmer over low heat for about 2–3 hours (depending on the desired consistency: the longer you cook it, the thicker the adjika will be).

5. About 20 minutes before the end of the process, add minced garlic and salt or sugar if needed. Prepare sterilized jars and seal for winter storage. Sweet homemade adjika can also be kept in the refrigerator.
