Step 1

Peel the onion and run it through a meat grinder. Then transfer it to a heated sauté pan with oil. Sweat until golden.

Wash the tomatoes and run them through a meat grinder. Do the same with the bell pepper and garlic. Don’t forget to remove the seeds from the pepper. Pour the resulting mixture over the onion on the heat.

Peel the apple, remove the core and seeds, and cut into slices. Rinse the hot pepper well and remove the excess parts. Grind everything through a meat grinder. Add to a saucepan. Add the salt and sugar as well. Cook for 20 minutes over low heat.

Prepare the jars and lids for canning. Finely chop the herbs and add them to the other ingredients. Then pour in two types of vinegar.

Let the mixture boil for a couple of minutes. Then pour the adjika into jars and seal them. You will get about 900 ml of sauce.
