Ajika with carrots and tomatoes

Description

Minimal ingredients — excellent result. These days, people are increasingly adding tomatoes, sweet peppers, and other vegetables, even fruits and nuts, to adjika! Store-bought adjika usually contains tomatoes, garlic, and red pepper; such adjika resembles a sauce more than a spice, as it's less spicy in taste. I'm sharing my homemade recipe. The finished sauce can be stored in the refrigerator for several days.

    Prepare all the necessary ingredients. Wash all the vegetables thoroughly. I choose the ripest tomatoes to get more juice. Pass the tomatoes through the meat grinder first.

    Remove seeds from sweet and hot peppers and rinse under running water. Peel carrots and garlic, then rinse as well.

    Pass the remaining vegetables through a meat grinder as well.

    Add sunflower oil.

    Pour in the vinegar.

    Add the salt and sugar, and mix everything well.

    Pour everything into a saucepan and place over heat. After boiling, simmer for 40 minutes.

    The adjika is ready. Pour it into jars, tightly seal with lids, let it cool completely, then store in the refrigerator.
