
Adjika with Onion for Winter

Homemade preserves keep for a long time. I personally really like this recipe for making adjika with onion for winter because of its aroma. I don’t know why garlic is added to adjika so often—in fact, with onion the preserve turns out much more fragrant and juicier! But I’ll probably add garlic next time too; for now, I’ll tell you how to make adjika with onion for winter quickly and easily. Jars keep for up to a year in a cool place.

1. Wash and clean all fruit and vegetable ingredients. Cut them fairly coarsely, then grind them in a blender or using a meat grinder. Place the resulting purée over medium heat. Add salt and sugar.

2. Grind and mix pepper (whole peppercorns and two types of ground pepper), bay leaf, cloves, and cinnamon in a coffee grinder or a mortar.

3. Add this spicy mixture to the puree, which should already be simmering. Stir, then taste. Simmer the mixture over low heat for 40 minutes. Add the vinegar and cook for another 10 minutes.

4. And now spoon the ready fragrant adjika into the prepared sterile jars and seal them for winter. Good luck!
