Description

Adjika is a hot seasoning in the form of a thick paste that pairs well with meat, fish, and many main dishes. The flavor of adjika depends first and foremost on the ingredients it is made from. Serve with herbs and sauce.

    To make garlic adjika for winter, we need hot peppers, bell peppers, tomatoes, and spices.

    Pass the hot green chili and bell pepper through a meat grinder. The bell pepper does not have to be green.

    Run the tomatoes through a juicer to remove the seeds and skins right away. You can use tomato juice instead of tomatoes if you prefer. Pour tomato juice over the resulting mixture.

    Place over heat and add spices (ground coriander, ground allspice, salt, sugar, ground black pepper, and other spices). Stirring, cook for about 40 minutes.

    Cook until the mixture has reduced by 50%. At the end of cooking, taste and adjust. If needed, add salt or sugar and press a couple of garlic cloves through a garlic press. Boil for 1 more minute, then turn off the heat. Pack the finished adjika into sterile jars and seal with lids.
