The appetizer is quick and easy to prepare. My mother suggested this simple recipe for cucumber adjika for winter. Of course, at first I was afraid to cook this way—there’s too much vinegar for my taste. But if you use vinegar with a low percentage, apart from a strong smell in the kitchen, there’s no harm! So I’ll tell you how to make cucumber adjika for winter using my recipe, and if you like, you can do it the old-fashioned way: boil all the vegetables in water, then add the vinegar—it will be tasty too. Serve the appetizer at the table.

    1. Here are the ingredients we will need. Wash the vegetables thoroughly.

    2. Chop the vegetables finely; dissolve the salt in water and let them stand in the salted water for at least 12 hours (or ideally the full 24). Then drain the water.

    3. Now simply transfer all the vegetables into a pot, pour in the vinegar, and let them simmer over low heat. There will be “heavy” steam, so turn on the exhaust fan. Gradually stir in the sugar, then all the specified spices.

    4. The vegetables should be soft but not mushy (vinegar helps with that). Prepare the jars; pack the hot mixture into sterilized, prepared jars. Seal with sterile lids for winter storage. Done!
