Adjika for Winter

Description

"Ogonyok" differs from any other adjika in that it contains a lot of hot pepper and garlic. Despite the long cooking process, the heat, flavor, and aroma are not lost. Run all prepared vegetables through a meat grinder and cook them with the spices. Good luck. Jars can be stored for up to a year in a cool place.

    Wash all the vegetables.

    Cut off the stems from the bitter peppers.

    Remove the seeds from the bell pepper. Cut it into fairly small pieces.

    Cut the tomatoes into wedges. Remove the green cores.

    Take a meat grinder. Grind all the vegetables through the finest metal screen.

    And put it on to cook. When the adjika comes to a boil, reduce the heat to low and simmer for 40 minutes.

    Stir the adjika regularly so it does not burn. After 40 minutes, add the spices, oil, salt, and sugar. Mix well — and cook for another 10 minutes.

    Regularly skim off and discard the foam. The dish is ready!

    Sterilize the jars and lids. Pour the hot adjika into the jars and seal with a jar wrench. Turn the jars upside down until they have cooled. Done!
