
Adjika (Very Simple Recipe)
Description
A delicious appetizer for any gathering. Such adjika is worth storing in a dark, cool place. There are countless recipes for this kind of appetizer; this one is among the simplest—it requires no boiling and no significant time investment. But it is worth noting that it turns out quite spicy. It pairs wonderfully with meat or in soups. You can also add walnuts; they will fit in very well. It can be served warm or chilled.

Wilt the chili peppers for 3 days in the shade on a tray.

Next, remove the stems from the chilies and place them in a blender bowl.

Add the remaining vegetables and herbs to the chili and blend until smooth.

Bring the vinegar to a boil and let it cool, then add it to the vegetables.

Grind the coriander and add it to the vegetables along with the salt. Mix everything well and refrigerate for 2–3 days, stirring occasionally.

Pack the finished adjika into jars and pour a thin layer of vegetable oil on top.
