
Real adjika (Abkhazian recipe)

Minimal ingredients — excellent result. Preparing authentic Abkhazian adjika won't take much of your time or effort. It's much simpler than it seems at first glance. This adjika pairs perfectly with shashlik and any meat dishes. You can add your favorite spices to the recipe, such as cumin, if desired. Serve chilled or at room temperature.

Wash the chili pepper, remove the stems, then cut it in half and remove the seeds and partitions. This is done to prevent the ajika from becoming too spicy.

Cut the cleaned chili pepper lengthwise, place it in a deep container, and pour warm water over it. Let the pepper soak in the water for 3 hours. It is important to remember to change the water every hour.

Peel the garlic, rinse the herbs under water, and chop everything with a knife or in a blender. Add chili pepper at this stage.

After all the ingredients have been minced, you can add coriander seeds, which should first be crushed in a mortar. Mix all the ingredients and add salt to taste. Authentic adjika according to the Abkhazian recipe is ready.
