Using a food processor, chop the carrots, apples, bell peppers, and tomatoes, and place them in a large pot.

Bring to a boil over high heat, stir, and bring to a boil several more times until the mixture boils steadily when stirred.

Reduce the heat to medium, cover with a lid, and simmer for one and a half hours. Stir occasionally.

Finely chop the garlic. Add sunflower oil, salt, and garlic, and continue boiling for another 30 minutes. Then you can jar it, or let the adjika cool and serve the sauce at the table.
